Chili Cheese Fries

By Hannah McClure Y’all, chili is one of my favorite dishes to make and eat! Especially when it’s paired with fresh cut French fries! It takes the winter feels of a big pot of chili to a summer dish alongside a burger or as a meal on its own. While I have written this recipe to be used with fresh cut fries, you may substitute it with the fries of your choice. No matter what your preference on fries may be, I hope you enjoy this recipe! 

You Will Need:

For the Chili

  • 1 tablespoon bacon grease 
  • 1 pound ground meat of your choice (Beef, goat, chicken, pork, turkey, venison) 
  • 3 cloves garlic, minced 
  • 1 quart tomatoes, diced 
  • 1 pint chicken stock 
  • 1 pint dark kidney beans 
  • 1 pint great northern beans 
  • 1 pint sweet corn 
  • 1 tablespoon chili powder 
  • 1 teaspoon ground cumin 
  • 1 teaspoon smoked paprika 
  • 2 tablespoon brown sugar 
  • ½ teaspoon sea salt 
  • ¼ teaspoon ground pepper 

For the Fries

  • 4 or 5 large russet potatoes, washed and sliced into fries (skin on) 
  • 3 tablespoons extra virgin olive oil 
  • 1 cup Muenster cheese 
  • 1 cup sharp cheddar cheese 
  • 1 cup feta cheese 
  • 1lb cooked bacon, diced 
  • Sour cream and green onions for topping 

Let’s Make Chili Cheese Fries!

  1. Pre-heat oven to 350 degrees Fahrenheit. 
  2. Place cut potatoes on a parchment lined baking sheet and gently toss with 3 tablespoons olive oil. 
  3. Season fries as desired. 
  4. Bake for 15 minutes, gently tossing fries at 7 minutes. 
  5. While fries bake, in a large pot, heat bacon grease till fully melted. Sauté garlic for 5 minutes. Add in ground meat and cook till browned. 
  6. Once meat is browned, add remaining ingredients, and bring to a boil. 
  7. Once a boil occurs, reduce heat to low, cover with a lid, and slow cook for 20 minutes. Be sure to stir occasionally so as to not burn the bottom. 
  8. Allow chili to cool 10 minutes. 
  9. Using a slatted spoon, spoon chili evenly over fries. Sprinkle with all three cheeses. 
  10. Return chili-covered fries to oven for an additional 10 minutes. 
  11. Remove from oven. Allow to cool for 10 minutes. Serve with toppings of choice.
